Easy Minestrone Soup Recipe

INGREDIENTS

The list is long, but they’re very likely mostly things you already have at home!

  • 5 tbsp Olive oil

  • 5 cloves worth of fresh garlic chopped (or garlic powder)

  • 1 onion, chopped

  • 2 carrots, chopped

  • 1/4 cup tomato paste

  • 3 cups-ish worth of chopped seasonal veggies (e.g. zucchini, pumpkin, snow peas, potato, beans, radish - anything choppable and soup-worthy works!)

  • 1 can diced tomatoes

  • 1 tbsp dried oregano

  • 1 tbsp thyme

  • 1 Veggie stock cube

  • 1 tsp salt

  • Black pepper

  • Chilli flakes / chilli powder

  • 1 cup pasta (macaroni, shell, spiral)

  • 1 can of beans (cannellini, kidney, 3 bean mix)

  • 1 cup spinach or kale or any leafy greens

  • 2 tbsp Lemon Juice

INSTRUCTIONS:

  1. Heat the olive oil in a large stockpot. Once hot, add the garlic, onion, carrot and tomato paste.

  2. Fry until onions are golden and carrots are soft-ish.

  3. Add seasonal veggies, oregano, thyme and fry for 5-10 minutes until fragrant.

  4. Add the diced tomatoes, veggie stock cube, 1.5L water, salt, pepper and chilli flakes.

  5. Bring the soup to a boil, then simmer for 15 minutes, stirring occasionally.

  6. Add pasta, canned beans and your choice of greens. Simmer for another 15 minutes or until the pasta is al dente.

  7. Add lemon juice, stir in and serve!
