Simple Tomato Passata Recipe

This is one really easy passata recipe to use up your tomatoes!

Over the summer, we had way too many tomatoes to know what to do with all of them. They all started going red around the same time and our dining table were full of them. So after asking around for ideas, I started making tomato passata, or plain pasta sauce. Homemade tomato passata tastes so much more healthier than store bought pasta sauce - you know exactly what’s in it and there’s no long list of weird ingredients.

Plus, it uses up a good amount of tomatoes, for those who have a garden-full just like us!

RECIPE

INGREDIENTS:

  • 2 tbsp Olive oil

  • 4 garlic cloves

  • 2 kg tomatoes

  • 1 large onion (or 2 small onions), chopped in small pieces

  • 2 tsbp sugar

HOW TO MAKE:

  1. In a large pot, boil tomatoes for 1-2 minutes and then place in a bowl of cold or ice-cold water. This should make it easy to peel the skins off.

  2. Peel skins off tomatoes.

  3. In another pot, add olive oil and cook the onion until golden.

  4. Add garlic and fry for 2 minutes.

  5. Add tomatoes and sugar, bring to a boil then simmer, stirring occasionally until all liquid has evaporated to the consistency you like your sauce.

  6. Tip into jars, allow to cool and freeze or refrigerate to use later.
